If you’re short on time in the morning, a nourishing bowl of cornflakes is a great alternative. Top with your favourite fruit and yoghurt and enjoy. Any extra calories needed can be added with chopped nuts, seeds and a drizzle of honey or maple syrup.

Cornflakes with Blueberries & Soya Yoghurt

For a quick breakfast but still giving you all the nutrition and calories you need for the day, cornflakes are a great stand-by to have in your pantry. Top with your favourite fruit and choice of yoghurt.

You can get in extra needed calories by adding chopped nuts. I find almonds are a tasty compliment to the flavour of cornflakes. Plus a drizzle of honey or maple syrup to give you that extra boost.

Ingredients

  • 1/2 cup (50g) cornflakes
  • 100ml almond milk
  • 1/3 cup blueberries
  • 1 tbsp soya yoghurt
  • 1/2 tsp cinnamon

Cornflakes are usually gluten free but much like oats, it depends on where they are manufactured to ensure they are totally gluten free. So I always opt for gluten free cornflakes to ensure I don’t have an allergic reaction. Alternative yoghurts such as oat, coconut or goats milk yoghurt are just as nice as soya.

Step by Step Instructions

Step 1

Add cornflakes to your favourite bowl. Top with blueberries and soya yoghurt (or your choice of alternative yoghurt). Pour over milk. Sprinkle over cinnamon and enjoy.
