Toasted Cheese & Tomato Sandwich (Grilled Cheese)

This is perhaps one of my all time favourite sandwiches. It needs to be toasted so that the cheese can melt and ouze out all its loveliness when you bite into it.

Experiment with additions such as basil, which compliments tomatoes perfectly. Avocado is a wonderful edition as well.

Ingredients

  • 4 slices sourdough bread
  • 2 Tbsp mayonnaise
  • 1 tomato
  • 55g cheddar cheeze
  • 55g gruyere or mozzarella, grated
  • pinch dried basil

Add calories with:

Avocado is the perfect calorie addition to this sandwich. Full of good fats, Vitamins C, B5, B6, E and K, plus a good amount of Folate and Fibre. They contain no cholesterol or sodium and are low in saturated fats. Fo perfect to add calories rather than more cheese.

Step by Step Instructions

Step 1

Sprinkle salt on sliced tomatoes and let drain. This helps it stay a little drier so the tomatoes don’t leak all over the bread.

Step 2

Spread mayonnaise on the outside of each slice of sourdough bread. Mayonnaise helps the bread get toasty, whereas butter will burn before the cheese is melted all the way.

Step 3

Place a slice of cheddar, tomato, basil on each slice of bread and sprinkle with gruyere. Add in avocado as well if you’re having it.

Step 4

Place, mayo side down, on a heated skillet and fry until golden brown. Turn sandwich over and fry on the other side. Both sides should be equally browned and the cheese melted just enough to squeeze out the sides of the sandwich. Tip: To speed up the frying process, cover the pan for a few  minutes, this will help melt the cheese a bit faster.
